They are renowned for their impressive size, with some individuals weighing over 2,000 pounds and measuring up to 20 feet in length, making them one of the largest freshwater fish in the world.
These ancient fish are especially noted for their roe—Beluga caviar—, a highly prized delicacy that is banned in the U.S. and many other countries since its harvesting endangers the Beluga sturgeons. Unfortunately, overfishing, habitat loss, and pollution have led to significant declines in their populations, prompting conservation efforts aimed at protecting these magnificent creatures and their ecosystems. As a result, the beluga sturgeon stands as a symbol of both ecological richness and the urgent need for sustainable practices in fisheries.
